416C Pork Spareribs, Breast Bone (Sternum) Off (medial view) are derived from the 416 Pork Spareribs.  The major difference is the breast bone or sternum has been removed by cutting the costal cartilage located between the anterior rib bones and the sternum.  This allows removal of the sternum and allows for the ribs to be singly removed by slicing between the ribs.  Total number of ribs will vary, however, 12 – 15 ribs are typical.
