The Department of Animal Science will be hosting the Fightin’ Texas Aggie Meat Judging Camp at the Rosenthal Meat Center on the campus of Texas A&M University on July 7-9, 2016. Registration will be available beginning June 1, 2016, and the camp is restricted to the first 100 participants. Registration materials will be located at

The cost of the camp is $300 per participant, and the cost will include camp activities, meals, and lodging.

  • Beef quality and yield grading
  • Beef carcass evaluation
  • Beef cuts evaluation
  • Pork cuts evaluation
  • Lamb carcass evaluation
  • Retail cut evaluation
  • Note-taking methods
  • Questions/reasons
  • Retail identification
